Jamaica, one of the most popular islands in the Caribbean, is known as the birthplace of Bob Marley and Reggae music, the Rastafarian culture, Marcus Garvey, and the Fastest man in the world, Usain Bolt. The island is known for its amazing foods, beautiful crystal-clear white sand beaches, alongside many waterfalls, rivers, and mountains that make the entire island irresistible.  Jamaica is rich in history and culture with some of the most hospitable people you will ever meet. On this island, the vibes are always “Irie” and there is always “No Problem”.  In essence, Jamaica is a breathtaking paradise!

A little history…

Ackee and saltfish is the national dish of the island of Jamaica. It’s eaten for all occasions – Christmas, Easter, and especially Sunday mornings. The ackee fruit originates in West Africa and is known to have been brought to the Caribbean during the mid-1700s. Saltfish is the Jamaican term for salt cod, a product produced in the North Atlantic. This type of fish was originally imported to Jamaica by plantation owners as an inexpensive way to feed their slaves.

Meet
Chef Bobo D.

Meet Chef Bobo D, a self-taught vegan chef from Kingston, Jamaica. Chef Bobo D is no novice in the kitchen. He grew up in his grandmother’s Hagley Park home, where he observed and learned all of her family’s recipes. Grandma Joyce was the best at combining the island’s savory flavors to make cornmeal porridge, stews, rice and peas, curry chicken, and so much more. The botanical aroma of fresh seasonings such as thyme and scotch bonnet peppers, as well as ackee and peppermint, was always present in the “yard.” Chef Bobo D immigrated to the United States as a child, and he recalls the first time his mother taught him how to cook a meal for his sisters. She guided him while he steamed rice on his own over the phone. Chef Bobo D, as we know him today, got his start here.

His conversion to Rastafarian culture, hence the name Chef Bobo D, was a defining moment in Chef Bobo D’s journey. His travels into the hills of Jamaica, in a community known as Bobo Hill, gave him extended culinary gifts, such as learning how to bake. “Yatty” is a local delicacy. It’s the Ital (vegan) version of a Caribbean beef patty, but without the beef. Chef had the good fortune to learn firsthand while on the hill.

Chef Bobo D has traveled throughout West Africa and Jamaica to learn how to blend and mix seasonings to make every meal a cultural explosion. Today, he provides weekly meal prep using recipes from his new recipe book. Chef Bobo D has a passion for good food and has dabbled with the idea of bringing his flavors to the world.  Always preparing meals for family events, birthday parties, and other occasions, everyone has encouraged Chef to step out.
